Ingredients

  • (3 lbs) Pork Butt
  • (1/4 cup) Brown Sugar
  • (1/4 cup) Smoked Paprika
  • (Pinch) Salt
  • (1 Tbsp) Cumin
  • (1 Tbsp) Onion Powder
  • (1 Tbsp) Garlic Powder
  • (1 Tbsp) Black Pepper
  • (1 Tbsp) Ground Mustard
  • (1 Tbsp) Chili Powder
  • (1 Tsp) Cayenne Pepper
  • (1/2 cup) Yellow Mustard
  • Black Beans
  • Corn
  • Red Onion, diced
  • Spinach, chopped
  • Quinoa
  • Cherry tomatoes, halved

Directions

  1. Mix dry ingredients in a bowl, whisking well 
  2. Completely cover pork in mustard, getting in all crevices
  3. Spinkle half of dry ingredients on pork and rub in until a fine paste is made (if the paste is still wet, add more dry ingredients)
  4. Put pork in crockpot and cook on low for 6-8 hours or until pork is fully cooked at 195-200 degrees or until it is falling off the bone and easy to pull apart
  5. Assemble all Burrito Bowl ingredients on a plate and enjoy with a nice cold beer outside with your family! 
    1. For an individual Burrito Bowl 1 cup Pulled Pork, 1/4 cup Black Beans, 1/4 cup Corn, 1/4 cup Diced Red Onion, a handful of chopped spinach, 1 cup of Quinoa, 3 Cherry Tomatoes Halved
