Ingredients
- (3 lbs) Pork Butt
- (1/4 cup) Brown Sugar
- (1/4 cup) Smoked Paprika
- (Pinch) Salt
- (1 Tbsp) Cumin
- (1 Tbsp) Onion Powder
- (1 Tbsp) Garlic Powder
- (1 Tbsp) Black Pepper
- (1 Tbsp) Ground Mustard
- (1 Tbsp) Chili Powder
- (1 Tsp) Cayenne Pepper
- (1/2 cup) Yellow Mustard
- Black Beans
- Corn
- Red Onion, diced
- Spinach, chopped
- Quinoa
- Cherry tomatoes, halved
Directions
- Mix dry ingredients in a bowl, whisking well
- Completely cover pork in mustard, getting in all crevices
- Spinkle half of dry ingredients on pork and rub in until a fine paste is made (if the paste is still wet, add more dry ingredients)
- Put pork in crockpot and cook on low for 6-8 hours or until pork is fully cooked at 195-200 degrees or until it is falling off the bone and easy to pull apart
- Assemble all Burrito Bowl ingredients on a plate and enjoy with a nice cold beer outside with your family!
- For an individual Burrito Bowl 1 cup Pulled Pork, 1/4 cup Black Beans, 1/4 cup Corn, 1/4 cup Diced Red Onion, a handful of chopped spinach, 1 cup of Quinoa, 3 Cherry Tomatoes Halved
