Breakfast Sausage and Egg Casserole

Directions

Ingredients:

  • 1 lb Pork sausage
  • 6 eggs
  • 1 bell pepper
  • 1/2 white onion
  • 2 cups spinach
  • 1 cup milk
  • 1 cup shredded cheese of choice
  • salt and pepper to taste
  1. Preheat the oven to 375 degrees F and lightly grease a 8x11 baking dish.
  2. Start by lightly browning your sausage, avoiding cooking it all the way through and set aside.
  3. Then chop up half a white onion and a whole bell pepper and cook until just soft. Add 2 cups of spinach and wilt. Set aside.
  4. Whisk together 6 eggs, 1 cup of milk, and salt and pepper until just beaten. Set aside.
  5. Add your ingredients in a layer of sausage, veggies, cheese, and egg mixture.
  6. Bake in the oven for 30-40 minutes and voila! You have 10 breakfast servings that you can freeze for later or enjoy as a brunch with the family.
