Directions
Ingredients:
- 1 lb Pork sausage
- 6 eggs
- 1 bell pepper
- 1/2 white onion
- 2 cups spinach
- 1 cup milk
- 1 cup shredded cheese of choice
- salt and pepper to taste
- Preheat the oven to 375 degrees F and lightly grease a 8x11 baking dish.
- Start by lightly browning your sausage, avoiding cooking it all the way through and set aside.
- Then chop up half a white onion and a whole bell pepper and cook until just soft. Add 2 cups of spinach and wilt. Set aside.
- Whisk together 6 eggs, 1 cup of milk, and salt and pepper until just beaten. Set aside.
- Add your ingredients in a layer of sausage, veggies, cheese, and egg mixture.
- Bake in the oven for 30-40 minutes and voila! You have 10 breakfast servings that you can freeze for later or enjoy as a brunch with the family.
